Pepper Jelly

Ingredients

  • 1 c. chopped bell pepper

  • 1/3 c. chopped jalapeno pepper

  • 1 1/3 c. vinegar

  • 2 c. sugar

  • 2 tsp calcium water

  • 1 1/2 tsp Pomona Pectin

Directions

  • mix peppers and vinegar in panĀ 

  • bring to a boil and boil for 5 minutes

  • while boiling mix 1/2 c. of sugar with pectin

  • mix calcium water to boiling mixture

  • add pectin sugar to boiling mixture, stir constantly for 1-2 minutes making sure pectin is dissolved

  • add remain sugar and bring back to a boil

  • once brought back to a boil remove from heat

  • fill jars leaving 1/4 in headspace

  • process in water bath canner for 10 minutes

  • add 1 minute to processing time for every 1000 ft above sea level
  • if you aren't familiar with Pomona Pectin you can find similar recipes using different pectin
  • eat with cream cheese and crackers
  • jalapenos are optional if not using use bell pepper instead
