Fermented Hot Sauce

Now this project was not my own but I get to enjoy the results and it was neat to make. My husband loves his hot peppers and hot sauce. He loves growing peppers and we have so many hot peppers seeds we probably wont use them before they go bad.

We had gotten hot peppers at the produce auction and I had some left-over jalapenos that I didn’t use for my pepper jelly and curt was on a mission to make some hot sauce. He found a fermented recipe and it seems easy enough. He made the brine and let them sit for about 10-14 days and then we blended them together.

One jar had just cayenne pepper, one had just bell peppers, one had just jalapenos and the last one had jalapenos and cayenne peppers. Once they were all fermented, we peeled some garlic, which could have been fermented as well, and mixed everything together. We put garlic, peppers, some of the brine and vinegar then mixed it in our Nutra bullet to get a smooth sauce. Oh my gosh were they good.  Both of our favorite was the cayenne pepper sauce which I can’t wait to turn into a buffalo sauce to make wings into. I was sad that we didn’t get more cayenne peppers because it was that good. The bell pepper sauce was good for our boys because they don’t like things overly spicy. The jalapeno sauce will be good for when I need to have a mix in like my chicken taquitos to give them just the right amount of heat.
